Having become a beekeeper during lockdown, I started out making beeswax lip balms, creams and candles before eventually wandering into the kitchen to experiment with something far more important.. hot sauce!
After a bit of trial and error (and the occasional eye-watering disaster), I discovered that raw local honey and chilli were a bit of a dream team. The honey, made by hardworking London honeybees collecting nectar from urban parks, gardens and whatever suspiciously fancy flowers they can find, brings a depth, aroma and sweetness that refined sugar just can’t compete with.
What started as homemade bottles for family, friends and tolerant colleagues soon turned into a very small, very local, slightly chaotic micro-business built around the idea that hot sauce should have flavour, character and a bit of London soul, not just pointless levels of pain!
But this project isn’t only about making your eggs, toasties, pizza or questionable late-night snacks taste better. It’s also about shining a light on pollinators and the massive role they play in the world around us. Honeybees get most of the attention, but bumblebees, solitary bees, butterflies, hoverflies, moths and yes, even wasps, all deserve some love too (Mosquitoes… we’re still working on).
The reality is that pollinators are under pressure from climate change, habitat loss and modern farming practices, and without them things would unravel pretty quickly. So if a hot sauce can encourage even a few people to plant some wildflowers, avoid harmful pesticides, support local producers or simply appreciate the tiny creatures buzzing around the garden, then that feels worthwhile.
At the end of the day, this is all about good food, local honey, a bit of heat and giving something back to the little pollinators doing all the hard work behind the scenes.
The bees made the honey, I just added the spice.
